Comcast Fall Festival Employee Appreciation Event

comcast_autocollage.jpgCafé Services Food Service Director Tim Davidson was tasked with catering an employee appreciation event put on by Comcast for over nine hundred of their Manchester Comcast employees. It was an outdoor tented event and the sun was shining, a great backdrop for the delicious Fall menu created by Chef Davidson and his team. The Fall themed menu included for appetizers Maple Glazed Scallops, Maple Sausage en Croute, Butternut Squash Ravioli with Sage Cream and Apple Brie Bites. Salads included Baby Greens with Candied Walnuts and Pears, Goat Cheese and Honey Vinaigrette. Spinach Salad with Warm Bacon dressing, topped with Egg, Bacon and Mushrooms. The entrees included carved to order Brine Roasted Turkey as well as Short Rib Osso Bucco braised with a traditional Soffrito. For sides we dished up Acorn Squash with Butter and Maple Syrup, Mashed Potatoes, Baked Sweet Potato and Creamy Butternut Squash Risotto. For the finishing touches our dessert table consisted of homemade Pumpkin Whoopie Pie Cake, Apple Tartlets and Apple Cobbler with Vanilla Ice Cream.  Along with the great food there was a live band and a farm stand set up by Middle Branch Farm so attendees could take home fresh fruits and vegetables.  Job Well done to Food Service Director Davidson and his team!

A few words from the Chef: The Fall luncheon was a great surprise for all the employees & was a definite morale booster.
