This month, people all over the country are preparing to celebrate their good fortunes over a Thanksgiving feast. Café Services, a corporate food services company serving Massachusetts, is sharing in the celebration. In corporate dining rooms across the northeast, Café Services is hosting Thanksgiving meals to show its appreciation for the loyal customers that help it thrive. Mike, Café Services Chef Manager at the Smithfield, Rhode Island site of Alexion Pharmaceuticals, served up his Thanksgiving spread on November 14. Café Services and Alexion joined to treat almost 200 employees to a bountiful Thanksgiving luncheon in authentic New England style. Around large tables decorated with festive autumn bouquets, diners feasted on traditional roast turkey with all the trimmings. They chose from a full smorgasbord of sides made from regional, seasonal fruits and root vegetables—including apple-sage stuffing, mashed potatoes in gravy, maple-glazed butternut squash and cranberry sauce. Also on the menu were a simple green salad and roasted barley and peas with sautéed mushrooms. Mike made sure to offer an Alexion employee favorite, chicken noodle soup. To please vegetarians, he served a special, sliced "tofurkey" entree topped with gravy. "The tofurkey dish was new to many of our vegetarian diners, and it was a hit," says Mike. "We also got a lot of compliments on the maple butternut squash." Speaking of compliments, the ultimate for Mike was the large number of employees that attended the Thanksgiving feast. "We served lunch to more than twice as many diners as on a typical day" he says. "That makes the three days of prep we put in all the more worth it!" Share this story, Choose your platform!
