From North Carolina’s own versions of deviled eggs and fried green tomatoes with pimento cheese, to its local favorite pickle brand, Mt. Olive Pickles, to the signature red slaw that accompanies every respectable plate of pulled pork – this is indeed a foodie state.
A popular side dish at Café Services corporate cafeterias, the classic recipe for Carolina sweet potatoes combines mashed sweet potatoes, sugar, eggs, melted butter, vanilla extract, and milk. Collard greens are typically boiled and often served with salted pork or ham, as well as hearty corn bread.
Some regional NC comfort foods include livermush, Carolina-Style Hot Dogs & Hamburgers, breaded and dipped fried chicken with NC’s own Texas Pete’s Hot Sauce (manufactured in Winston-Salem), chicken-fried steak, and shrimp n’ grits.
Clam chowder with Hatteras style clam juice is a popular meal throughout the Carolinas. The soup’s base ingredients include clams, potatoes or grits, onions, celery, carrots, and spices such as pepper and thyme. Delicious local Calabash seafood blends lightly breaded and fried shrimp, fish, crab cakes or hush puppies.
North Carolina Style BBQ was introduced to the area by Sir Walter Raleigh himself in the 16th century. Authentic North Carolina-Style BBQ consists of any form of Pork, barbequed over hardwood or hardwood coals, and served with any vinegar-based sauce.
